Using herbs and spices

Creating meals using spices and herbs is one of the best ways to add colour, taste and aroma to foods. Choose fresh herbs that look bright and aren't wilted, and add them towards the end of cooking. Add dried herbs in the earlier stages of cooking. When substituting dried for fresh, use about one-third the amount.

Chicken Wings with Oyster Sauce

Ingredients Method
1/2 lbs chicken wings (about 15)
Marinade
3 tbsp oyster sauce
2 tbsp light soy sauce
2 tbsp Chinese rice wine or dry sherry
1 garlic clove, minced
1 green onion, diced
Salt and pepper, to taste
Preheat oven to 350 degrees F.
In a small bowl, combine all the marinade ingredients.
Place the chicken in a shallow glass baking dish and brush with part of the marinade. Bake the wings for approximately one hour, turning over at least once, and brushing with the marinade 2 or 3 times during cooking.
